One of the things I love about beetroot is the way it dominates a smoothie. A real beetroot smoothie does not give any other fruit the opportunity to exist in a smoothie! Hahaha!!
Beetroot is a very dominant root vegetable in a smoothie – I wonder what gender beetroot would be if it were human hmmmm!!!
A few weeks ago I popped into a smoothie bar, this doesn’t happen very often as I make my own smoothies daily. I ordered a ABC smoothie -Apple + Beetroot + Carrot and I was disappointed. As you can imagine I was expecting to see something bloody red but I was given a very odd looking smoothie. I tasted it and yes it did taste a bit beety but there was more apple than beets in that smoothie. I will not be visiting that place in a hurry.
On the smoothie menu today we have a delicious mix of fruits and two very dominating root vegetables (purple cabbage and beetroot)

INGREDIENTS
1 Raw Beetroot
A Handful of blueberries
2 Red Apples
2 Slices of Ginger
10 Red grapes
Half of a purple cabbage
A tall cup of water
SWAPS
Keep Beets
Keep Red Apples
Keep Ginger
Keep Strawberries
Keep Red grapes
Swap blueberries for red/black grapes
Swap coconut water for water
PREPARATION
Wash, peel and chop your beets and the stalk into small pieces and place them in your blender, add your base and blend for one minute, add your purple cabbage and blend on full power with more water.
Add your other ingredients and blend on FULL power until it is smooth.
Serves two people.
Remember you have to put in the work to see the results.
