Purple cabbage or red cabbage as some call it is one of the most colourful vegetables I have ever seen. Even when it’s cooked it doesn’t lose its colour. Purple cabbage as so many benefits and can be eaten raw, boiled or blended into smoothie or a juice. There is certainly a method for everyone to experience and include purple cabbage into their diet.
On the menu today is a very simple vegan meal: Purple cabbage and soya mince wrap. If you are not a fan of Soya mince you can swap it for mixed vegetables or even certain grains such as couscous or quinoa. This is a very simple and quick meal and does not require you to be in the kitchen for so long.
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Ingredients
- 1 Large beetroot
- Black pepper
- 1 tin of chickpeas (or use cooked dry rice)
- Engevita – optional
- 1 clove of garlic
- 1/2 onion
- 1/2 small cup of oats
- 1/4 purple cabbage – optional
- 1/2 Sage
- 1/2 Smoked paprika
- 1/2 Sea salt
- Mustard – optional

Preparation
- Preheat oven to 200c/fan 180c/gas 6.
- Rinse & drain chickpeas very well & dice beets and onion.
- Add chickpeas, beets, onion, garlic, oat, nutritional yeast, salt and pepper to a food processor and process until everything is mixed well, but still a little chunky.
- Divide the mixture into 8 portions and shape into patties. If the mixture is too wet, add a couple of tablespoons of oats.
- Arrange patties on the baking sheet and bake for 25-30 minutes, turning them over once halfway through baking time.
- Serve on buns/bap with lettuce, red onion, avocado, tomato and hummus.
- Add your favourite veg- I added purple cabbage.
- Your homemade beetroot burger ? with red / purple cabbage is ready.
Spray your pan with two pumps of oil place your soy mince, chopped onions, garlic, ginger, everyday seasoning and paprika in a pan and let it cook for 10-15 minutess

Once your mince is nice and brown add your chopped mixed vegetables and cook for a little bit.
In a separate pan, place your mushrooms, onions and pan fry it. Add black pepper and chopped courgettes and fry them together.Once your above mix is cooked, add your mushroom mix to the soy mince and season to taste with some sea salt and vegetable stock. Place on the side to cool down.
Simply delicious, very vegan and filling.
